Vegan Challenge Weeks 2 and 3

I had a pretty rough first week with the Vegan Challenge. However, as time went on, it got progressively easier. that's not to say it's simple, I really miss ice cream and hamburgers and things of that sort (I guess that's what I get for just jumping into it and not weening myself off of meat and other animal products).

Something that has made these past two weeks much simpler is my new little blender. It looks exactly like the one pictured here, except the body is purple. I make fruit smoothies in it for breakfast with soy milk, my new favorite product, and it has definitely made being a vegan a little more fun. It even has lids so I can take whatever I make along with me to class or wherever I happen to be off to! I only have one week to go in the challenge, so look for an update on how it ended!
